Pork Cook Temperature

Pork tenderloin is a versatile cut, and can be prepared for any meal.
I often prefer to cook with the lid closed, which keeps heat in, allowing the piece to cook more rapidly, and without turning. Since it cooks thoroughly without turning, it also provides a "pretty" face side.
Here's how I made this dish.
2 slices pork loin
pepper on top.
Julienne sliced onion
fresh rosemary sprigs
grapefruit (I used pink.)
olive oil (optional)
liquid smoke (I only use Colgin brand.)
Heat pan, then reduce temperature to medium low heat.
I prefer to lightly coat the pan with olive oil to prevent sticking, then place the meat.
Sprinkle salt, pepper, garlic powder atop meat.
Cover with lid - lids help keep moisture intact while cooking. (I like glass because it allows visualization.)
Cook for a few minutes, then place liquids (soy sauce, balsamic vinegar & smoke) in pan, around - NOT on meat.
Replace lid, allow to cook further, liquids will make a reduction.
Meat will become whitened when it is completed cooking. (It shouldn't take more than 15-20 minutes.)
Increase pan heat.
Add coffee to reduction.
Reduce to syrupy consistency.
Pour reduction decoratively around/across meat & plate.
Separate sliced onion layers & apply decoratively.
Place grapefruit decoratively.
Place fresh rosemary sprigs decoratively.
The flavors with fresh onion, rosemary and grapefruit are wonderfully palatable and provide a nice balance with the meat.
1 ? cups Earth Family Teriyaki Sauce
1 lb. Bacon
21 lb. Pork Tenderloins
Slice pork tenderloins to 1 ? in thickness and place in a resealable bag with 1 cup of Earth Family Teriyaki Sauce. Let tenderloins marinate for at least an hour in refrigerator.
Cook bacon for 5 minutes on medium in a skillet. Let bacon cool and drain on paper towel.
Preheat grill to medium- high. Take tenderloins from bag, pat dry and wrap bacon around side of each tenderloin, anchoring bacon with a toothpick.
Place tenderloins on grill and grill for 7 minutes per side, turning with tongs. The internal temperature for the pork should be150?.
Warm the remaining ? cup of Earth Family Teriyaki Sauce and drizzle over the cooked tenderloins before serving.
